Rainbow Bridge

On Tuesday my mom had to put her 11 year old German Shepherd to sleep. His name was Thor. When he was a few years old I went through a horrible breakup which left me with nowhere to live. With no other options I had to move in with my parents for a little while. Those were some very dark days. I lost count of how many nights I spent, cuddled up to Thor, and sobbing my heart out into his fur so hard it felt like my heart would literally break. I would cling to that big dog like he was my life raft in the an ocean storm, and in many ways he was.

I also spiraled into a full blown eating disorder during that year and felt like everything was out of my control. Many miles were spent running with Thor and exploring long stretches of rural acreage, just him and I. We would get back to the house hot and exhausted, but together. We formed a bond that I have never shared with another dog, not even my own.

As he got older he lost most of his hearing and sight. But he still always knew when it was me pulling up in front of the house. He’d still greet me with his tail wagging, even though his legs were shaky with age.

I love you Thor. There will never be another dog quite like you, and you’ve left a giant German Shepherd sized hole in our hearts and lives. Tell my Oma and Opa I miss them, and take care of all the loved pets who made it there before you.

Here is what I’ve been up to the past while.

Thursday and Friday were spent in all day seminars about current legal issues we HR professionals face. It was actually much more interesting than it sounds. The food however, was NOT. I did have one of these for the first time in I don’t know how long.

Immediately followed by the realization of why I don’t drink stuff like that anymore.

Friday I got a last minute request to meet a friend for drinks. Since I couldn’t see any reason to say no, I agreed to come out for one. We went to a bar that has a great happy hour, and some pretty danged phenomenal drinks. They make everything from scratch. Ev-ery-thing. They even roast the tomatoes they use for their bloody mary’s. So it’s no surprise then that one drink turned to about six. Four more friends showed up and I laughed so hard that my cheeks cramped. How does that even happen? This was the last I had. A blackberry and peach concoction.

Got home and made a quick dinner of fish tacos, I even remembered to take a crappy picture of them before they were devoured. How nice of me.

Saturday morning I easily talked the man into going to Mexican food. We tried a new place closer to our house and I was sorely disappointed. The chips were good, but the rest was mediocre at best, awful at worst.

Mine was chile relleno and a cheese enchilada. The chile had an eggy, spongy, thick soggy breading on it. Chile relleno blasphemy!

The rice and beans tasted exactly the same and were clearly made using some kind of premixed spice packet. We had no choice but to wash the whole disgrace down with a pitcher of margaritas. They were not shy with the tequila. Perhaps they know their food is disgusting? After walking around in the heat I had a serious headache and once we got home I quickly fell asleep. For four hours. The whole time knowing I hadn’t even started my big final art project. Yeah. I don’t want to talk about it. Once I got up I immediately started my project.

I worked on it for the whole rest of the day and into the night. Woke up Sunday and got right back to work. Made some progress.

I finally finished it and settled in for another quick meal of more fish tacos with a big salad. While studying for my humanities final.

This salad dressing is what we are currently obsessed with. When a teenager requests a specific type of dressing you bet your sweet bippy I’ll buy it. What exactly is a bippy? Where did that saying come from? Anyway, this is the dressing.

Yesterday I presented my art final and got an “A + + + five points!” according to the professor. So there’s that.

Tonight I am finishing my final paper for humanities, then tomorrow is my final exam. Followed by a week off and then the next semester of craziness begins!

Oh I am sure those hanging baskets are helping SO much! My girl dog is just as helpful. Guarding one of the hanging flower pots so I can proceed with my picture taking.

Last night was a burger kind of night. Stopped by Whole Foods after work to pick up some blue cheese burger patties. They were delicious and not nearly as orange as this crappy picture makes them seem.

While delicious they were also very salty after my additions of more blue cheese and some anchovy sauteed jalapeños and onions. So today is about hydration, hydration, hydration in the form of cucumber, lemon and mint infused water.

And my early lunch was left over orzo and spinach, with some of those anchovy sautéed jalapeños and onions on top. Absolutely delish.

Only two more weeks left in this semester! Which leaves me with only roughly 8.2 billion more years until I actually graduate. I hope everyone is having a Wonderful Wednesday!

Weekend doings

This weekend was eventful and uneventful at the same time. Saturday consisted of yard work and a movie at home (Chasing Mavericks). After a morning of yard work a large lunch was in order. Artichoke, veggie burger and pasta salad. Every lunch should include avocado and A-1.

While eating lunch we watched Chasing Mavericks, the film about surfer Jay Moriarity. Really good movie, it was one of those that stuck with me. Very moving.

The yard work I mentioned was cutting back the Russian Sages which I should have done in the late fall/early winter. But no, I procrastinated again. You should see the hot mess the garden bed looks like right now. Maybe I’ll get a picture to post. It can serve as a pre-cautionary tale.

Sunday we went to El Adobe for Cinco De Mayo. No picture necessary since I got the same exact thing I had there last week. Then we went back to Home Depot to price out some items for our planned bathroom re-model. That we are doing ourselves. Yikes. Is it crazy to start with the downstairs bathroom that everyone sees? Oh well, go big or go home right? At home it was more art homework. I am awful at drawing anything that is supposed to be realistic. Yes, her makeup is that crazy in the real picture I am drawing from.

I also finished reading one of my absolute books for the fifth or so time. It is a hilarious memoir by Haven Kimmel called A Girl Named Zippy. You should check it out if you are into comical tales of growing up at poverty level in Indiana. Takes real talent to make that hilarious. I also started this book:

It is amazing and I have had a hard time putting it down. Now back to work. I hope you are all having a fabulous Monday!

What in the hot holy….

Oh goody look what I tried to have for lunch! That’s right folks, a hot mess.

I have a measly half hour lunch, which gives me JUST enough time to get to Whole Foods and back if I am feeling lucky. Today I was.

I got there and was putting the dressing on my salad when BAM, the whole frigging top of the thing comes off and drenches my greens.

I didn’t have time to start from scratch so I went with it thinking I could just dump the top layer off when I got back. Well queue every idiot within a ten mile radius to suddenly have to be driving everywhere. All that time on the ride back gave the dressing time to thoroughly soak everything in the carton. Well that’s what I get for going for a healthy salad instead of the pizza and indian food I really wanted. Lesson learned. Not really. It’s likely this same exact thing will happen in the near future.

Here’s to hoping all your lunches were (easily) better than mine. Happy freaking Thursday.

Where did the weekend go?

The weekend started like this Friday night. This gigantic jug was filled with wine right when I got home on Friday. It was THAT kind of week.

My chihuahua sidekick in the back there was ready for trouble. It was a night in of pampering. Straightened my hair, painted my nails, plucked these furry caterpillars I try to pass off as eyebrows etc.

The only food worth noting from the weekend was this on Saturday. Margaritas and my favorite Mexican food on the patio. The weather was absolutely perfect for it.

I got the chile relleno and a fish taco on the side. Then we went to Home Depot to get some advice and ideas for a big bathroom redo we are thinking about doing. No pictures of that as it wasn’t very exciting. It WILL be exciting if we actually pull it off. If/when that happens I will be sure to do before and after pictures.

And now here we are at Tuesday. The week is off to a relentless start kind of like a runaway train filled with explosives. Finals are right around the corner and at this point I am flying by the seat of my pants.

I texted that picture to Brad to let him know his grill was being defiled. Obviously he didn’t mind since he knew he’d be having some nomtastic grilled veggies in his lunch today. Just look at these beauties.

Speaking of yummy lunches, last weekend I made some black bean veggie burgers. Today I am feasting on a patty in a lettuce wrap. Noms are here.

The garden is growing like crazy, and the weather is gorgeous. I cannot wait for the Farmer’s Market to start back up so I can start having grilled dinners like the one above on a regular basis! I see tons of grilled veggie sandwiches in my future.

Today…

Has been a DAY. For reasons I will leave to the imagination. The last 24 hours weren’t all bad though. For instance, last night a classmate surprised me with this beauty when I showed up to art class. An avocado boba tea!

You see, my city may lead the charge with beautiful skies and no taxes, but we are woefully behind on anything involving the food scene. There are only two places in town where you can get this stuff (that I know of). One of those places I would rather risk a romantic night with Chris Brown than drive to. And the other… yeah not much better. So this was truly a sight for sore eyes. I savored every drop too.

Then we come to today. BLAH. Not even my snacks are exciting. Can you tell what my least favorite part of trail mix is?

On a positive note I am alive, I have a job, and I am healthy. Time to put some things in perspective.

Is everyone having a better Tuesday than I am?! I certainly hope so.

Weekend fun

I had a very nice weekend. Friday I had the day off work and wasn’t as productive as I wished. I did get my act together in the late afternoon to make myself presentable to meet up with my girlfriend Kelli. It had been FAR too long.

We started at The Twisted Fork for martinis (coconut for me, pineapple for her) and appetizers. Sadly I only got a picture of one, the shrimp corndogs. You might remember these from my birthday dinner post in January. Unfortunately they were not very good. Absolutely NO seasoning, bland.

Then we skipped our happy butts across the parking lot to my favorite local wine bar, Vino 100. How lucky am I that both of these fabulous places are within 2 miles of my house? At Vino we enjoyed some amazing lemon meringue martinis. Out. Of. This. World. As always.

We had no choice but to make fun of some of the goods up for sale. This shirt for $40. I mean really? Face blotted out to protect the hilarious.

Saturday I got busy baking Brad’s favorite peanut butter cup cookies.

For dinner we had a celebratory feast. Steak and lobster for Brad, crab for me, artichoke for both. What were we celebrating? Life! We are alive, in love, healthy and isn’t all of that worth celebrating? We think so. You should try appreciating the little things if you don’t already. You will be amazed at how even the crappiest day is made better by counting the blessings instead of the burdens.

We are also trying to do little upgrades here and there to love our home more. Sunday we put up a new ceiling fan and it is crazy the difference it makes. I should have taken before pictures. I will make sure to with the next project.

I also finally planted some garden plants. Here’s to hoping the weather holds up. My little asparagus plants from last year are coming in strong. The weather has been beautiful and I cannot wait for the Farmer’s Market to start up again. I hope you all had nice weekends and that your Monday’s have been productive and pleasant!

Plant Progress

Some of my plants have gotten too big to have the lid on their container closed, so I had to move them to bigger containers. If I lived in a normal climate I could have put them in the ground but no. Instead I put them in bigger pots and out on the filthy patio table to soak up some temporary sun.

Knowing that spring is a fickle thing they are currently hibernating in my laundry room sink. Hot and sunny last weekend, but as I type this it’s freezing, windy and hailing.

In the food world I have been trying to eat much healthier as I mentioned in my last post. To get me motivated I am trying some new things like these protein pancakes with almond butter and maple syrup.

These are dry and definitely need some tweaking to the recipe.

And I am sure some of you lose sleep worrying about how I keep my book-bag secure when I am not at school. Well worry no more, Razzle has it under control.
