Roasted cabbage

I love cabbage. Completely, obsessively, religiously adore cabbage. If cabbage could read it would see this post and get a restraining order that’s the kind of love I am talking here.

So when I saw, on the all famous pinterest, a preparation previously unknown to me I felt it my duty to try it. And try I did. It was an easy, cheap, healthy recipe. My kind of thing. You see all I did was slice the cabbage into rings like this:

Then I drizzled it with olive oil, salt, and chili powder.

I then baked it at 400 degrees for 35 minutes until browned around the edges. At which point we had this:

This will be put into the regular rotation, without a doubt.

I make this all the time! SOOO GOOD! Sometimes I’ll throw in 1 red onion cut into wedges, some garlic cloves (whole) and a can of chickpeas (drained and rinsed). So glad you’ve fallen in love with it too!
